Ingredients

For the Birria Meat:

• 2 lbs beef chuck roast (or goat/lamb, if preferred)

• 2 dried guajillo chiles

• 2 dried ancho chiles

• 1 chipotle pepper in adobo sauce

• 4 cups beef broth

• 1 onion, chopped

• 4 garlic cloves

• 2 tbsp apple cider vinegar

• 1 tsp cumin

• 1 tsp oregano

• 1/2 tsp paprika

• Salt and pepper to taste

For the Pizza:

• 1 gluten-free pizza crust (store-bought or homemade)

• 1 cup shredded mozzarella cheese (or your favorite cheese blend)

• 1/4 cup chopped cilantro

• 1/4 cup diced onions

• 1 lime, cut into wedges

For Dipping:

• Consommé (reserved birria broth)

Instructions

1. Make the Birria Meat:

1. Remove stems and seeds from the dried chiles, then soak them in hot water for 10 minutes to soften.

2. Blend the softened chiles, chipotle pepper, onion, garlic, vinegar, and seasonings with 1 cup of beef broth until smooth.

3. In a pot or slow cooker, add the beef, chile sauce, and remaining broth. Cook on low heat for 6-8 hours (or 2-3 hours in a pressure cooker) until the meat is tender and shreddable.

4. Shred the beef, and strain the cooking liquid to use as consommé.

2. Assemble the Pizza:

1. Preheat the oven to 425°F (or as directed for your gluten-free crust).

2. Place the gluten-free crust on a pizza stone or baking sheet.

3. Spread a thin layer of consommé over the crust as the sauce base.

4. Sprinkle shredded mozzarella cheese evenly over the crust.

5. Add shredded birria meat as a topping.

3. Bake:

1. Bake the pizza for 12-15 minutes, or until the cheese is melted and bubbly.

4. Garnish and Serve:

1. Top the pizza with chopped onions and cilantro.

2. Serve with lime wedges and a bowl of warm consommé for dipping.

Enjoy this bold and flavorful twist on pizza! Perfect for taco lovers craving a gluten-free treat.
